1° Step
Place the flour like a fountain on a table, put the sugar in the center, then the cold butter cutted into small pieces, the 2 eggs, the grated crust of a lemon and a pinch of baking soda.
2° Step
Start working the ingredients from the center with your fingertips. Work everything quickly until you get a homogeneous mixture. Then wrap the dough in the transparent film and leave it in the fridge to chill for at least half an hour. Now remove the film and spread the pastry on a floured surface until it is about 3/4 mm thick. With the floured rolling pin, roll up the pastry, then cover it with a buttered and floured pie tin. Cut out the excess edges, then add the cherry jam covering the whole surface.
3° Step
Roll out the dough and advanced with a cake washer, cut the strips or decorations as you like. Bake the jam tart at 180 ° C for 40 minutes.
